Harvest period: mid-September, depending on the degree of phenolic ripeness and climatic conditions.
Harvesting method: by hand in perforated crates, in order to allow good aeration of the grapes.
Vinification and aging: after a soft pressing, we proceed with the Cryomaceration for 24 hours and then alcoholic fermentation, of the classic type in steel tanks at a temperature of 22°-24°. Through several daily pumping overs, a maceration of 4-5 days is allowed, then in the press to divide the solid part (skins and grapeseed) from the liquid. It is decanted to obtain a good clarity. After completing malolactic fermentation, the wine continues in Batonage for at least 3 months to continue in steel tanks for up to a year of aging and then bottled.
Tasting notes
Colour: ruby with lively reflections
Bouquet: intense and typical aromas of cherry, black cherry, light notes of violet and mint with minerality in the finish.
Taste: balanced and full-bodied with soft tannins and all supported by good acidity.
Food pairings: first courses with rich sauces, stuffed pasta
