Harvest period: Mid-September, depending on the level of phenolic ripeness and weather conditions.
Harvesting method: Hand-picked in perforated crates to ensure good aeration of the grapes. These crates are transported to the cellar for destemming and crushing within the following day.

Aroma: Intense and typical of cherry, sour cherry, with light notes of violet and mint, ending with mineral hints.
Taste: Well-balanced and full-bodied, with soft tannins supported by good acidity.

Vinification and Aging
After gentle crushing, alcoholic fermentation proceeds in traditional steel tanks at a temperature of 22°-25°C. Through four daily remontages (pumping over) lasting about 30 minutes each, maceration lasts 4-5 days. After this, the must is transferred to achieve good clarity. Following the completion of malolactic fermentation, the wine continues aging in steel tanks.
