The vineyard is processed according to integrated pest management methods, with low environmental impact, with techniques designed only for the production of this wine.  

Harvest period: mid-September, depending on the degree of phenolic ripeness and climatic conditions.
Harvesting methodby hand in perforated crates, in order to allow good aeration of the grapes, early in the morning from 06.00 to 08.00 to have a low temperature of the grapes. These crates are transported to the cellar to be crushed-destemmed as for a red wine with the addition of dry ice both in crushing and in the tank, to immediately bring the temperature of the must to 0 degrees of temperature. Cryo maceration begins for 96 hours at 0°. 
Then we move on to pressing to separate the skins and seeds.

Fermentation begins, carried out at low temperatures: 10°-11°, very slow about 35 days. Racking is carried out and decanting begins in steel tanks at a temperature of 3° for about 15 days. The same operation is repeated 5 times, in order to achieve adequate clarification in a natural way, without any use of clarifying substances. From this moment on, the aging phase begins in stainless steel tanks. and then we proceed to bottling.

Colour: Intense straw yellow 
Aroma: fruity, persuasive and persistent, with aromatic notes, fruity of geranium that turn to peach and apricot  
Taste: rich, full and round, of great persistence with notes of citrus fruits, savory  
Food pairings: Raw fish, shellfish, white meats, excellent with fish and grilled lamb meat, Pizza
