Harvest period: Mid-September to early October, depending on the level of phenolic ripeness and climatic conditions.
Method of harvest: Hand-picking into perforated crates to ensure good aeration of the grapes. These crates are transported to the winery for immediate crushing and destemming. Dry ice is added to the must in the tank, which is then sealed, and a 24-hour cryomaceration is carried out.
Vinification and Aging
After only 6 hours of cryomaceration, 30% of the liquid is removed (bleeding). For each of the two grape varieties, separately, fermentation takes place in temperature-controlled stainless steel tanks at a low temperature of around 11°C and proceeds slowly for about 25 days. The wines are then blended and left to decant for 40 days at 3°C before continuing aging entirely in stainless steel tanks until bottling.
Tasting notes
Color: Rosé with purple hues
Aroma: Strong personality with scents of rose, cherry, blackcurrant, and grapefruit.
Taste: Full-bodied, very fresh, with silky tannins, great complexity and minerality, and an integrated, enveloping acidity.
Food pairings: Cold cuts and cheeses, artisanal and rich pasta dishes, but especially BBQ
