Harvest period: Mid-September and early October, depending on the degree of phenolic ripening and climatic conditions.
Method of harvest: by hand in perforated boxes, in order to allow a good aeration of the grapes. These crates are transported to the cellar to be crushed-destemmed immediately, dry ice is added to the must in the tank, the tank is closed and a 24-hour cryomaceration is carried out
Vinification and aging: After only 6 hours of cryomaceration, 30% of the liquid is removed (bloodletting) Only this removed part proceeds for fermentation, which takes place in temperature-controlled steel tanks, at a low temperature of 11 ° and slow about 25 days, to continue with a decanting period of 30 days at 3. It continues to age entirely in steel tanks (at least 18 months) until bottling.
