Harvest period: end of September, first days of October, depending on the degree of phenolic ripeness and climatic conditions.  
Harvesting methodby hand in perforated crates, in order to allow good aeration of the grapes.  

Vinification and aging:

after a soft pressing of Nebbiolo grapes, alcoholic fermentation proceeds, of the classic type, in steel tanks at a temperature of 30-32 °. Through several daily pumping over, a maceration of 10-12 days is allowed, following which the must is subjected to a period of 3 months where the bottoms are kept continuously in motion, allowing a large extraction of mannoproteins, with consequent cleaning of the aromas and increase in elegance, also in this process malolactic fermentation is carried out. 

Afterwards, the wine is racked into barrels (10 hl barrels with Allier French oak staves and Slavonian oak bottoms) and 1500 liter barrels (Slavonia), tonneaux (500 liter French oak barrels) where it will spend 26 months of aging. A selection of each individual barrel is made to choose only the most suitable parts to create this wine. Finally, a pre-bottling phase lasting 1-6 months in steel tanks is bottled, to continue with further refinement in the bottle for a few months.

Colour: bright and bright garnet  
Bouquet: great personality of aromas, fruit in alcohol and spicy with the classic mineral nuances, of great freshness. 
Taste: rich, full and round with elegant and fine tannins, with a slight acidic note.  
Food pairings: Red meats, game  

Serving temperature: 18°C.  
Alcoholic strength: 14 %  
Annual production: 4,000 bottles
